
Vegetarian Chilli
Nutritious, wholesome, heart healthy and tasty.
Ingredients:
- 2 tbsp canola oil
- 1 1/2 c red onion diced
- 1/2 cup diced red pepper
- 1/2 cup diced green pepper
- 2 tbsp finely diced garlic
- 1 tbsp ground cumin^
- 1 1/4 tsp cayenne^
- 4 lg tomatoes chopped
- 3 c cooked black beans, pinto beans
- 1 (15-oz) can tomato sauce
- Salt to taste
- 1/4 c chopped fresh cilantro leaves
Method:
Use a wok^ or skillet. Add oil, then garlic followed by onions. Sauté onions well. Add green peppers, tomatoes, sauté and cook for about 10 minutes. Add cumin and cayenne pepper powder. Pour the tomato sauce and cook for another 10 - 15 minutes until everything is blended well. Mix in salt and finally the cilantro leaves.
Serve by itself or on a vegetarian hot dog.
