
Vegetable Kabob (Memorial Day Special)
Pointer 1: Fresher the ingredients, better the marination taste. Here's a marination secret that will get you to a whole new level. I used these quantities to cook for 10 people. You may adjust quantity based on size of the crowd.
Ingredients:
A generous blend of:
- 2 cups fresh coriander/cilantro
- 8 cloves fresh garlic
- 3 or 4 2" sticks fresh ginger
- 6 medium sized red onions
- 2 Tbsps lemon juice
- 8 green chillies
- 1 Tbsp cumin powder^
- 3 Tbsp coriander powder^
- 1 Tbsp tamarind extract
- 4 tsps turmeric^ powder 4 tsps.
- 1 Tbsp. fresh squeezed lime extract
- 1 Tbsp cayenne^ pepper powder
- Salt to taste
- 1 large tub of plain, regular yogurt
- 1/2 tsp. garam masala^
Method:
Grind all the fresh ingredients together to a coarse paste. Add the powdered spices as well. Mix them in regular plain yogurt. Soak your vegetables or your meats in this marination in a large bowl. Refrigerate for at least 4 hours before throwing them on the grill. The spices bind together with the veggies and/or meat.
Barbecue as you would do normally by braising the marinated veggies with your barbecue sauces.
