Zucchini Kootu

Ingredients:

  • 2 -3 zucchinis, skinned and chopped into 1/2 “ squares
  • 2 tsps. turmeric
  • 2 Tbsps. canola or extra virgin olive oil
  • 1 cup moong dhal
  • 1/2  tsp. black pepper
  • 1 chillie pepper
  • 2 tsp. urad dhal
  • 2 Tbsp. shredded coconut  (if available use fresh)
  • 1/2 tsp. mustard seeds
  • Salt to taste
  • 1 Tbsp. curry leaves (if available)

  • Method:

    Wash and cut vegetables as indicated.  Use a pot and cook the moon dhal. When done add the cut zucchini.  Add turmeric and let them cook. Toast the chillie, black pepper and urad dhal with a little oil.  Grind them along with the shredded coconut.  Use a small blender.  Add a little water to grind to a fine consistency.  A coarse consistency will work too. After zucchinis are half cooked, add the ground mixture.  Let it cook until the vegetables are soft to touch but not mushy. Turn off heat.

Garnish:
Add a tsp. of oil in a butter melter.  Add the mustard seeds and let it spurt, then add the urad dhal and toast.  Pour the garnish over the finished vegetables and close with lid.  Finally sprinkle some curry leaves.

Serving size approximately 4.
