Swiss Chard
This is one of those greens that people just pass by in the grocery stores.. If you like spinach or broccoli raab, swiss chard falls in between. Try this simple recipe.
Ingredients:
- 1 bunch swiss chard
- 4 Tbsps. olive oil
- 5 cloves garlic diced
- 1/2 a red pepper chopped (optional)
- 2 tsp cayenne^
- 1 tsp. crushed black pepper
- Salt to taste
Method:
Wash chard thorougly in running water a few times. Drain water and set aside. Take a large skillet or wok^ , warm and add 1 Tbsp. olive oil. Drop the diced garlic and sauté for a few minutes. Add red pepper and chard. Chard would cook as the water evaporates. In about 6-8 minutes it would be just right. Add the crushed cayenne, black pepper and salt. Turn off heat. Add olive oil just before serving.
