Stuffed Okra
Stuffed Okra

Goes great with any Indian bread. This preparation is quite dry so you may want to have a dhal as a side dish in addition.

Pointer 1: Fresh Okras are the best for this preparation. Okra is hardly used for anything other than Gumbo in the US. Try this purely delicious vegetarian dish and you may like it.

Pointer 2: A good way to test fresh okra for tenderness is bend the tip of it. Tender ones snap immediately while the tough are hard even to touch.

Ingredients:

  • Oil for sautéing
  • 1/2 pound fresh okra
  • 1/2 onion cut slim lengthwise
  • 1 medium-size tomato chopped into any size
  • 1 Tbsp. cumin powder^
  • 1 Tbsp. coriander powder^
  • 1 - 1/2 tsp. garam masala^
  • A dash of chillie powder (optional)
  • 1 tsp. turmeric powder^
  • 1/2 tsp. cumin seeds^
  • 1 Tbsp. chopped fresh coriander (optional)
  • Salt to taste

Method:

    Mix powders together. Slit okra lengthwise. Add the mixture of powder into the slit. You may adjust amount to how strong you want the taste of spices to be. Take a flat pan. Let it warm. Add oil and the stuffed okra. Let it cook slowly to coat all sides and turn slightly brown. Okra cooks easily so it might take just about 15-20 minutes for it to sauté and heat evenly on all sides. Remove and set it aside.

    Add a bit of oil to the pan. Add cumin and let it roast a little. Add the cut onions and let it sauté until translucent. Add the turmeric and the diced tomatoes. Mix everything well. Now add the cooked okra. Toss a couple times and transfer to a dish. Spread chopped coriander right before serving.

    Will yield approximately 3 servings.
