Grilled Portabella Mushrooms

Portabella mushrooms can be grilled, oven roasted, sautéed or used as is in almost any dish your prepare. They blend in with several other vegetables without losing their distinct taste. I have used portabella mushrooms in Indian, Italian, Thai, Chinese, Mexican and Greek recipes. The nutritional value is phenomenal as well. The grilled recipe I have below can be used for a sandwich burger, or as a side dish, an appetizer, or can be had with nachos and salsa, and the list goes on and on. Their use is limited only by a cook's stretch of his or her own imagination.

Pointer: Pick firm ones. Wash and dry them with a paper towel right before use.

Simple Marinations:

1. Add a bit of dry vinigarette or red wine in a pan. Soak mushroom for about an hour before grilling.
2. Add olive oil with crushed garlic in a bowl, soak mushrooms in for an hour.
3. Add olive oil with any herb seasoning and soak mushrooms in for an hour.
4. Take low-fat yogurt, add turmeric, cumin and coriander powder, soak mushrooms in until cooking time. You may add cayenne pepper for spice.

Ingredients:

  • 4 Large portabella mushrooms
  • 1/2 a medium-sized red onion
  • 2 cloves garlic minced
  • 2 Tbsps. olive oil
  • salt to taste

Method:
Wash and dry mushrooms. Remove stem, chop fine and set aside. Use any method of marination mentioned above. After an hour of marination, remove and place them in a barbecue grill, or on a hot pan for stove top grilling, or place them in a 375 degree oven. Drizzle them with plain or flavored olive oil. Allow mushrooms to turn lightly brown before removing them from heat. Serve on a burger bun with some pureéd avocado, red onions (optional) and diced tomatoes. May add some slices of mozarella cheese or any other mild cheese so as not to overpower the taste of mushrooms before serving.

If serving as an appetizer, while the grilling is taking place, add the diced stem in a lightly oiled pan, with a Tbsp. of diced red onions and minced garlic and sauté for about 8 minutes. Fill this mixture in the hollow of the large grilled mushroom, spread some cheese and return to oven for another 8 minutes.
